What You Will Need:

  • 1 large egg
  • Half a cup of all-purpose flour
  • Half a cup of wheat flour
  • 1 teaspoon of baking powder
  • Half a teaspoon of baking soda
  • 3/4 cup carrots
  • 3/4 cup grated zucchini
  • 2 ripe mashed bananas
  • Half a cup of milk or cream (cream is a lot better)
  • Half a teaspoon of salt

Time to Bake!

  1. Prepare all your ingredients. Sift the salt, all-purpose flour, wheat flour, baking powder, and baking soda into a bowl. Add in the carrots, zucchini, and banana plus the cream or milk and egg.

2.  Mix everything together until well combined. The batter should be just a bit denser than pancake batter. You may adjust the thickness by adding less or more of the milk or cream.

Pour into a silicone loaf mold or use a small loaf pan lined with baking paper.

Bake in a preheated oven set at 350 F for 20-25 minutes until done.

You can also adjust the temperature depending on your oven because ovens do not work the same way even if set at the same temperature.

Once baked, allow to cool for a least half an hour before unmolding.
