This healthy, delicious Southwest Chicken and Rice soup is perfect for when you want a hearty recipe but don't have a lot of time to prepare. You can get it in your slow cooker in just 12 minutes and it's both economical and healthy.

2tspolive oil
1lbboneless skinless chicken breast, cubed
1/2 tspsalt
1/4 tspblack pepper
1onion diced
1green pepper seeded and diced
1jalapeno seeded and diced
2clovesgarlic
1tbspchili powder
2 tsp ground cumin
2canschicken broth
1can tomatoes
1cupfrozen organic corn
1cupbrown rice
1tbsplime juice
Instructions
In a skillet, heat olive oil to medium-high heat and brown cubed chicken breast, season with salt and pepper or fajita seasoning (if you like).
Add chicken, onion, green pepper, jalapeƱo, garlic, chile powder, cumin, chicken broth, tomatoes, corn, rice, and lime juice into a slow cooker.
Cover and cook on high for 4 hours
Spoon into bowls and garnish with avocado, cilantro, sour cream and serve with tortilla chips or corn bread.
