Choose your favorite ripe or slightly over-ripe fruit
Wash fresh fruit or berries. Remove peel, seeds, and stems
Cut fruit into chunks
Right here you can make the decision to cook the fruit or go raw. If you are using tart fruit, you may want to cook it a bit to bring the sugar out. Cook the fruit at medium-low heat for 10-15 minutes, until fruit has softened. You can also add a tablespoon or two of a sweetener of choice. We like honey or Agave syrup, but experiment to see what you like.
Puree fruit in a blender till smooth. Use 2 cups of fruit for each 13" x 15" fruit leather.
Add 2 teaspoons of lemon juice for every 2 cups of light-colored fruit. (pears, apples or bananas to prevent darkening
Spread puree evenly onto a food dehydrator tray or if using oven a 13" x 15" jelly roll pan works well. Line pan with plastic wrap being careful to smooth out wrinkles. Do not use waxed paper or aluminum foil. Don't get too close to the edge.
Approximate drying times will vary depending on the drying method. It can take up to 18 hours in an oven at 118 degrees.
While still warm, peel the fruit from plastic wrap and roll up or cut into shapes. Store in plastic wrap. They will keep up to 1 month at room temperature or 1 year in the freezer.
